Mount Everest, the highest peak of the Himalayas and the tallest mountain in the world, is more than 29,000 feet high, and it is believed that some 40 peaks in this mountain range are higher than any other spot on earth. More than 18,000 species of exotic plants grow in the regions in and around the Himalayas. Many are found nowhere else in the world. The hardy, long-lived people who inhabit these mountains—living and working in extremely high altitudes and extreme temperatures—have found that around 8,000 of the plants unique to their ecosystems have healing and health-sustaining properties.</p>

<strong><br />
Woflberry</strong><br />
The term goji berry technically refers to the Tibetan goji berry, also known as Lycium Barbarum (its Latin name). It is a member of a family of flowering plants known as the Solanaceae, a plant family which also includes within its ranks potatoes, tobacco, and tomatoes. Roughly eighty different varieties of lycium berry exist, including the Chinese Wolfberry (often touted by Chinese healers as a cure for male sexual dysfunction). It is a deep-red, dried fruit about the same size as a raisin. The Goji berry tastes to some extent like a cross between a cherry and a cranberry.</p>
<p><strong>However, the Chinese Wolfberry is only considered a genetic cousin of Lycium Barbarum and not a true goji berry.</strong></p>
<p>Goji berries thrive in confined valleys in million year old soil in wild and cultivated areas.  Like bushes with vines, the plant reach over 15 feet. They are members of the Boxthorns, in the taxonomic family Solanaceae that also includes the Potato, Tomato, Eggplant and Tobacco plants. The southern variety has the Latin name Lycium Chinese while the northern species (Lycium Barbarum) grows wild in the sheltered mountain valleys of Tibet and Mongolia. It is the northern species that most of the commercially available Goji juice is derived from harvesting the berries which can be difficult since they are so sensitive. If touched while fresh, Goji will oxidize and turn black. Instead of touching, they are shaken onto mats, then dried in the shade.</p>

<p>It is believed that the Himalayas were home to the world’s first natural healers. These early herbalists then shared their knowledge with the natives of China, Tibet, and India, where it contributed to found some of the world’s most ancient medical traditions. Among the most valued Himalayan secrets was the tiny red berry Goji which became so popular that visitors brought them home and propagated them around the region. Since then, Goji has become a staple of Asian medicinal foods.</p>
<p><strong>Goji berries contain polysaccharides</strong> which strengthen the immune system. A polysaccharide found in this fruit has been found to be a powerful secretagogue (a substance that stimulates the secretion of rejuvenative human growth hormone by the pituitary gland).</p>
<p>Goji berries have been traditionally considered as a longevity, strength-building, and sexual potency food of the highest order. <p><strong>Goji’s Protective Properties</strong></p>
<p>Goji offers a wide variety of nutrients, from vitamins and minerals to more complex molecules and amino acids. Goji contains 18 different amino acids including all 8 that are regarded as the essential amino acids.</p>
<p>Goji is an important source of Beta carotene, much better than even carrots. Beta Carotene is provitamin A and a powerful antioxidant. Goji also provides some complex molecules called polysaccharides which the body uses to calm nervousness, enhance muscle growth, protect against infection, strengthen memory, and protect the heart. Among these is Beta sitosterol, which is an anti-inflammatory and lowers cholesterol.</p>

<p><strong>Goji Polysaccharides</strong><br />
Dr. Earl Mindell, pioneers the research of goji polysaccharides. Goji&#8217;s four unique polysaccharides, or phytonutrient compounds, function as directors and carriers of the instructions that cells use to communicate with each other in our body. Unique to goji, the 4 polysaccharides can differ in quality depending on the origin of the plant and the increasing conditions for a specific region in a specific year.</p>
<p>It took Dr. Mindell eleven years to perfect the practice of isolating the highest quality berries from the multitudes of different Goji berries, cold processing them so that each bottle could be standardized guaranteeing that each bottle was equally the highest standard and very little changed from the fresh berry to the bottle.</p>
<p>There are many varieties of Goji just as there are many varieties of grapes for wine making —as many as 41 species growing in Tibet alone!</p>
<p>Dr. Mindell knew that he must exhaustively scrutinize the dozens of varieties to find the one true goji—the one that had been discovered by the early Himalayan healers, and which, from ancient times, had been praised in legend.  A spectrometer can detect even subtle differences between berries at the molecular level,  in the same way that human fingerprints can be used to distinguish one person from all others on the planet. This technique results in the creation of a graph, a unique fingerprint for whatever is being tested—a Spectral Signature.</p>
<p>In terms of research relating to the polysaccharides in Goji berries, there are quite a number of them. A study showed that treatment treated with polysaccharides isolated from Goji berries among seventy nine people in advanced stages of cancer actually confirmed a high rate of regression. When combined with a ordinary cancer treatment drug patients showed a 40.9% regression rate, where as compared to a 16.1% regression rate for patients treated only with the drug.</p>
<p>One study revealed that the blood pressure in hypertension rats could be declined significantly by treatment with polysaccharide. Another showed that polysaccharide isolated from the berries significantly subdued the growth of tumors in mice and encouraged the production of beneficial antibody agents, noticeably improving their immune system.</p>
<p>A research from the Hubei Medical University in China showed that a purified component of goji polysaccharides dramatically enhanced the ability of mice to swim for long periods and to increase the amount of exercise they could do. Molecules from Goji berries were found to inhibit the oxidation of &#8220;bad&#8221; LDL cholesterol in a study by another group of Chinese researchers. LDL oxidation is believed to be one of the primary factors in artery damage that leads to heart disease.</p>
<p>Another fascinating study from another Chinese research group found that adding Goji extract to diseased tooth root surfaces improved the attachment and growth of new, healthy gum tissues in diseased areas.

We use the Tibetan Goji Berries with pumpkin seeds, sunflower seeds, flax seeds, pecans, small amount of pine nuts, walnut pieces, dried blueberries, apples slices, cherries, peaches, pineapple, and a small amount of coconut shreds.<br />
Cream of Buckwheat with Goji Berries</p>
<p>For people who struggle with wheat allergies and gluten intolerance, buckwheat is an ideal food. Many people who are having physical and emotional challenges find that removing wheat and other gluten containing foods from there diet makes a profound difference in how they think and feel. Buckwheat has plenty of protein and B vitamins, and is rich in phosphorus, potassium, iron, and calcium. Although buckwheat has many grain-like characteristics, it is from an entirely different botanical family, and is actually a fruit. Since buckwheat is unrelated to the classic cereal grains, those who are allergic to wheat can tolerate buckwheat. It is also Delicious!</p>
<p>To make a serving for two people: Bring 2 ½ cups of water to a boil, slowly stir in ½ cup of Cream of Buckwheat, return to boil. Add a handful of Goji Berries per person. A dash of good quality salt is optional. Reduce heat to low, simmer 10 minutes stirring frequently. Enjoy!

A well covered with Goji vines had been dug beside a wall near a legendary Buddhist temple during the Tang Dynasty (around 800 AD). Over the years, numerous Goji berries had fallen into the well. <p>It is believed that the Himalayans were the first natural healers, sharing their knowledge with the ancient herbalists of China, Tibet, and India. CVD is a killer of people in the prime of life, with more than half of all deaths occurring among women.</p>
<p>According to the Centers for Disease Control and Prevention, one-third of those suffering heart attacks do not survive, with about 340,000 of them dying in the emergency room. Even more troubling worrying, another 250,000 people with heart attacks will succumb before they ever reach the hospital. Most of these are sudden deaths caused by cardiac arrest.</p>
<p>CVD includes dysfunctional conditions of the heart, arteries, and veins that supply oxygen to vital life-sustaining areas of the body like the brain, the heart itself, and other vital organs. A lack of oxygen causes the tissue or organ to die.</p>
<p>There are several risk factors for heart disease; some are controllable throughchanges in diet, exercise, and behavior. Other risk factors are uncontrollable. These include: male sex., old age, family history of heart disease, post menopausal women, race (African or Latin descent are more likely to have heart disease than are Caucasians).</p>
<p>Still, there are many risk factors that can be controlled. By making changes in your lifestyle, you can actually reduce your risk for heart disease. Controllable risk factors include</p>
